Summer Salad

Summer Salad is one of our favorites around here. It's a great dish to add to any meal in the summer and super easy to make! We like to sit it out on the counter and make "drive-by bites" during the day. Today,  we are making it to take to our annual neighborhood Fox Hollow Point Party. Thanks to our neighbors, Ronnie and Debbie, for arranging this gathering every year.

Summer Salad Recipe

8-10 Cucumbers, peeled and sliced
4-5 Roma Tomatoes diced (any tomato will do)
1 Vidalia Onion sliced

Put all of that in a large bowl and add the following:

chopped parsley for fresh summer salad

2 cups of water
1 cup of distilled white vinegar
1/2 cup of red wine vinegar
1/2 cup vegetable oil or olive oil
1/2 cup sugar
3 tablespoons of salt
2 tablespoons of coarsely ground black pepper
Chopped fresh parsley (I don't measure this, just grab a handful and go with it!)

Stir and refrigerate for a couple of hours. When the bowl gets empty, just add more tomatoes, cucumbers and onion. If you don't want this much, just 1/2 the recipe.

Note: You can buy red wine vinegar at any local grocery or I linked a recipe above to make your own by bonappetit.com above. It's always fun to try making your own.

This is great served with meat cooked on the grill, fresh squash from the garden and some bacon wrapped asparagus. We love it with sandwiches for lunch, as a snack, and for a side dish with dinner. It's great to add as an option for dinner guests because if you make it the day before it's even better!

  2. This is an excellent salad. My only problem is the oil solidifying
    • I haven't had that happen. Not sure what would cause it to solidify. :)
